A Healtea with a small cookie, is a cuddly comfort! So here is a little recipe to please everyone and to offer, it makes a homemade gift made with love!
Sugar cookie
Cookie
1 cup (250 mL) white sugar (or Swerve style sugar)
1 cup (250 mL) salted butter
2 organic eggs, well beaten
2 1/2 cups (625 mL) organic all-purpose flour
2 tbsp. (10 ml) baking powder
½ tsp. (2.5 ml) hymalayan salt
Icing
1 1/2 cups (375 mL) icing sugar (can take Swerve style sugar)
3 tbsp. 1 tbsp (45 ml) milk
Biscuits
In a mixer, beat the sugar and butter about 2 minutes until a creamy mixture is obtained. Scrape sides and bottom of bowl. Add the eggs one at a time, beating well after each egg.
In another bowl, combine the flour, baking powder and salt. Beat dry ingredients into creamy mixture.
Roll out cookie dough to ¼ inch (0.6 cm) thickness on lightly floured work surface. For best results, do not roll out the dough too thin. Use cookie cutters of your choice to cut out different shapes of cookies. Place cookies on a baking sheet lined with parchment paper. (ideally put a fridge for 30 mins and then leave at room temperature 5 mins then nead)
Bake at 350 ° F (180 ° C) for 10 minutes or until bottoms of cookies are golden brown.
Bakes about 4 dozen cookies, depending on the size of the cookie cutter.
Icing Combine icing sugar and milk to desired consistency. Using a pastry brush, brush the frosting over the cooled cookies. Optional: garnish with icing or colored sugar, toasted coconut or sliced almonds, and chocolate shavings or chocolate chips.
